What you taste, smell, feel
Taste is chemistry meeting nerve endings. The "heat" of chili isn't temperature β it's capsaicin firing pain receptors that evolved to warn you about burns. Wasabi's bite is allyl isothiocyanate hitting the same channel. The umami in MSG is a glutamate ion clicking into a receptor first cloned in 2000.
